A retrospective at New York’s Grey Art Museum looks back on her whimsical, elegant and occasionally absurd works

Alison Knowles’ most famous work is made of salad — lots and lots of salad. Sliced, washed and ready to eat, the verdure plops from a great height on to a tarp below, followed by cascades of oil and vinegar. Volunteers at ground level toss the whole mess with sticks or rakes, then divide it up among the viewers/diners as a multisensory delight.
